Minty Yoghurt Dips

Ingredients

For 4 people ()

  • 2 peppers (any colour)
  • 2 carrots
  • 1 floret of broccoli
  • 2 small courgettes
  • 150 g natural yoghurt
  • 30 g fresh mint, chopped
  • 2 limes squeezed

Directions

  1. An essential to any outdoor picnic or a great summer snack.
  2. 1. Slice the peppers, carrot and courgettes lengthways.

  3. 2. Chop the broccoli into small florets.

  4. 3. Mix the yoghurt, mint and lime juice together.

  5. 4. Grab your picnic blanket and get dipping!

  6. Top tip: Houmous is another tasty dip to have alongside the yoghurt.
