Cheesy Omelette

Ingredients

For 2 people ()

  • 4 free range eggs
  • 1 teaspoon(s) milk
  • 1 red pepper, chopped into small pieces
  • 40 g cheddar cheese, grated
  • 1 small handful of parsley, chopped
  • 1 knob of butter

Directions

  1. A really tasty meal for a simple dinner.
  2. 1. Break the eggs into a bowl (being careful not to get any shell into the mixture!) and whisk using a fork.  

  3. 2. Add the parsley, milk and the grated cheese and stir.

  4. 3. Heat the butter in a small frying pan and add the chopped peppers.  Cook for 2-3 mins.  Put half of the peppers into a separate bowl.

  5. 4. Add half of the egg mixture to the frying pan.

  6. 5. Cook on a low heat for 5-7 mins until the egg is cooked through.  If the egg is not cooked on the top, pop the omelette under the grill for a couple of minutes.

  7. 6. Serve the omelette and then pour the remainder of the egg mixture and peppers into the frying pan and repeat step 5.

  8. Top tip: Try adding other vegetables such as courgette or mushrooms.
