Jacket Potato with Tuna, Avocado and Green Pepper

  • 2 large baking potatoes
  • 1 large avocado, chopped
  • 1 green pepper, diced
  • 2 tablespoon(s) mayonnaise
  • 10 g chives, finely chopped
  • 1 lemon, squeezed
  • 1 knob of butter (optional)


  1. This dish gets the 'healthy eating' award, without sacrificing any taste.
  2. 1. Bake the jacket potatoes in the oven at 190 degrees C for 30-40 mins, or until soft on the inside.

  3. 2. Meanwhile, mix the tuna, mayonnaise, pepper, chives, lemon juice, and seasoning.

  4. 3. Add the avocado and mix gently, being careful not to break up the avocado.

  5. 4. Serve on top of the potato, with the butter if desired.

  6. Top tip: For an even healthier alternative, try this without the mayonnaise.
