BBQ Rice Salad

Ingredients

For 6 people ()

  • 250 g long grain rice
  • 1 small red pepper, diced
  • 1 small green pepper, diced
  • 1 198g tin of sweetcorn
  • 1 spring onion, diced
  • 170 g sultanas
  • 170 g salted peanuts
  • 1 227g tin of pineapple chunks in juice
  • 1 glass(es) olive oil
  • 3 tablespoon(s) white wine vinegar
  • 1 heaped tsp curry powder
  • 1 heaped tsp brown sugar
  • 1 teaspoon(s) salt
  • 20 g parsley, chopped

Directions

  1. You'll be invited to every BBQ on the block after making this delicious salad!
  2. 1. Cook the rice in 500ml boiling water for 15 mins or until the rice is soft and the liquid is absorbed.

  3. 2. Add all of the salad ingredients and mix well.

  4. 3. Mix all of the ingredients for the dressing into a measuring jug and stir well.

  5. 4. Pour the dressing over the rice salad and mix.

  6. 5. Serve warm or cold.

  7. Top tip: This dish is just as delicious the next day so make plenty!
