Red Pepper, Avocado and Feta Couscous Salad


For 4 people ()

  • 250 g couscous
  • 2 large red peppers, diced
  • 2 avocados, chopped
  • 100 g tomatoes, quartered
  • 1 lemon, squeezed
  • 200 g Greek feta, crumbled
  • 100 g pitted black olives, halved
  • 50 g pine nuts
  • 1 handful of coriander, chopped
  • 1 teaspoon(s) olive oil


  1. This fresh dish is the perfect salad for al fresco dining.
  2. 1. Drizzle the olive oil over the dry couscous before adding 400ml of boiling water.  Cover and leave to stand for 10 mins or until all of the water has been absorbed.

  3. 2. Add the lemon juice to the couscous and fluff up using a fork.  Add the pepper, tomatoes, olives, pine nuts, coriander and seasoning. Mix well.

  4. 3. Add the feta cheese and avocado and mix gently.

  5. 4. Serve warm or cold.

  6. Top tip: Add half a finely chopped fresh green chilli if you want a bit of kick!
